Because the albums have a lot of crap on them. The first one is most consistent though.

well why don't you just listen to the good songs?
or, radical idea, take the good songs and mix them with songs from different artists...?

Cos a well-made mix is (imho) seamless, features tracks that may have been overlooked alongside the hits, and features the elusive "third record" where Song A + Song B = Brand New Song C. Artists with a large canon of tracks offer almost unlimited opportunities to make mixes of various styles (e.g. melodic transitions, uptempo, downtempo, remixed versions, rarities, live cuts, etc).
