Richard Cheese does some great lounge covers of popular songs. My favorite at the moment is Add it Up by the Violent Femmes.

Martin Gore - By This River
Talking Heads - Take Me to the River
Ian Brown - Thriller
Jamie Lidell - Music Will Not Last (cover of Herbert's "The Audience")
U2 - Neon Lights


oh, and Peter Gabriel's cover of "Get Up Stand Up" isn't incredible but it's definitely interesting

Arcade Fire's version of The Talking Head's "Naive Melody (This Must Be The Place)"

And if you like covers, might I suggest coverville.com. It's a podcast where the guy plays all covers, and it generally has a theme. It's good fun to listen to!
